Smoked Potato Salad Recipe

Smoked Potato Salad! Let me tell you I gave the old lady the odd eyebrow when she suggested it to use up our leftover Smoked Baked Potatoes. However she proved me wrong, that has to be some of the best potato salad I have ever had.

Now we have always been big on making our own side dishes, and she reminded me not to ever doubt her abilities in the kitchen. We took her recipe for Grandma’s Potato Salad and gave the base some tweaks to make up this one. I do have to say the key to the flavor was allowing it to set in the fridge overnight. Next time I plan to smoke up some more Smoked Eggs to put in it!
Smoked Potato Salad Recipe Ingredients:
- Smoked Potatoes- You can use any potatoes for this salad. Red Potatoes will add a different flavor to the salad. I have also made this using Yukon gold potatoes. Baking potatoes are the ones I most commonly use
- Celery Stalks
- Dill Pickles
- Red Onion
- Eggs
- Mayonnaise
- Dijon Mustard
- Salt and Black Pepper
- Smoked Paprika

How To Make Smoked Potatoes:
Rinse and scrub excess dirt off your potatoes.
Stab each potato with a fork to puncture it and pat your potatoes dry.
Get your smoker rolling and to a temperature of 225 degrees. Now I personally use the Pit Boss Pro 1100 from Lowes, if you don’t have Lowes, Walmart, and Amazon carry other Pit Boss options or Pit Boss website itself. This will also work in any electric or pellet smoker as well.
*I used Pit Boss Grills Mesquite pellets but you can use any flavor of pellets to smoke your baked potatoes.*

Once I had my Pellet Grill rolling smoke I set it at 225 degrees with the P Setting at P7.
Rub olive oil over your potatoes and salt them as well.

Set on your rack in your smoker and allow to smoke for at least two hours. If you want you can rotate them but I prefer to set it and forget it.

Test to see if your potato is tender with a fork before removing it from the smoker.
Allow them to be cool off before starting to make your potato salad.
How To Make Smoked Potato Salad
Boil your eggs until hard. If you want to add more smoked flavor, use Smoked hard-boiled Eggs (see my recipe -> here).
I set a timer for two minutes per egg once my water is boiling.
When the eggs are done, remove them from the water and allow them to chill in an ice water bath, then peel and set aside.
Once your smoked potatoes are cooled off, remove the skin, then dice them with a knife.
Reserve a couple of eggs for the final garnishing of your Smoked Potato Salad.I used an Egg Slicer to slice my garnish egg for topping the salad.
Next, chop up your celery, onion, pickles, and eggs.

Combine the mustard and mayo, and then start to mix in all the other ingredients in a large bowl. You can add more mayo or mustard if needed.
Put in a serving dish and top with smoked paprika and sliced boiled eggs.

*This dish is best made the night before and served the next day! It really allows the flavors to blend together.* Perfect to make for your next cookout.

How To Store Smoked Potato Salad
Store in the fridge in a container for up to four days after making it.
