Now one thing I have learned over the years is to cook to temp, not for a set time. Now I have fallen in love with my Pit Boss Pro 1100 from Lowes, if you don’t have Lowes, Walmart, and Amazon carry other Pit Boss options or Pit Boss website themselves. This pellet grill is comparable to a Traeger Pellet Grill, it’s a good idea to shop around as a lot of people have different opinions. I love that I can set it at 225 with smoke at a low temperature, I can run inside and take a shower or prep sides and it just cooks my meat with an amazing smoky flavor!

Smoked Chicken Breast Ingredients:
- Chicken Breasts– You can do this with either bone-in or boneless chicken breasts. I prefer boneless as I shred the meat afterward to use in other recipes, and the boneless shreds better.
- Olive Oil
- Johnny’s Seasoning Salt
- Lawry’s Garlic Salt
- Montreal Steak Seasoning
How To Make Smoked Chicken Breast:
Start by pulling out your chicken breasts and brushing them with oil. Now you can dab them dry with paper towels or even use dark meat or chicken wings instead. That’s what I love about chicken recipes; there is no best way
Season your breasts with a dry rub of the seasonings above, a chicken seasoning, spice rub, chicken rub, or your favorite seasoning blend; some people call this a dry brine.
You could also season them and throw them in a Ziploc bag to pull out for later as well. Boneless skinless chicken breasts are one of my go-tos for last-minute dinners, especially a healthy meal with a lean cut of meat. (If you want a wet brine recipe this one ->here is my favorite) Personally, the spices above make my favorite rub, which you can mix in a small bowl prior to rubbing down the chicken.
Now one of the important steps is to allow the boneless breasts to accumulate to room temperature; this helps them smoke better as they will take in the smoke flavor better.
Start your smoker up and get it rolling, smoke. I used Pit Boss Grills Mesquite pellets but you can use any flavor of pellets to smoke your chicken, everyone has opinions on what the best wood pellets for smoky chicken are.
It is important to note you can make this on any smoker, a Traeger smoker, Charcoal Smoker, a gas grill, an electric smoker, or a charcoal grill. The cooking time will vary based on how it is cooked, but also on the size of the breasts if it’s a whole chicken, and the cut of chicken. Just be sure to know how your smoker smokes and to use a water pan or aluminum foil if needed.
Once I get my Pellet Grill rolling smoke, I set it at 225 degrees with the P Setting at P7.
You can cook at a hotter temperature if you are in a hurry, but 225 on my Pitboss is my sweet spot. The lower temperature and indirect heat give me the best results for the best-tasting and juiciest smoked chicken breasts without too much smoke. Low and slow also seems to be the convenient way for me to get the best chicken breast. This is most of the smoking process in the cooking process of this easy recipe; it adds so much flavor depending on the cooking time.

Next, flip your meat as necessary to make sure both sides cook evenly.
When nearing being done cooking, use an instant-read thermometer or meat thermometer to check the temperature of the meat at the thickest part of the chicken breast is cooked. You want this to be at an internal temperature of 165 degrees or higher with the temperature probe or probe thermometer. Large chicken breasts will take longer to cook.
