This Easy Smoked Chicken Breast Recipe makes for the perfect weeknight dinner! I love finding new easy smoker recipes that either myself or the old lady can make on a weeknight. Most nights’ work can end late, so fast and easy are key for the main protein part of dinner.

Now one thing I have learned over the years is to cook to temp, not for a set time. Now I have fallen in love with my Pit Boss Pro 1100 from Lowes, if you don’t have Lowes, Walmart, and Amazon carry other Pit Boss options or Pit Boss website themselves.
This pellet grill is comparable to a Traeger Pellet Grill; it’s a good idea to shop around, as many people have different opinions. I love that I can set it at 225 with smoke at a low temperature, I can run inside and take a shower or prep sides, and it just cooks my meat with an incredible smoky flavor!
Smoked Chicken Breast Ingredients:
- Chicken Breasts– You can do this with either bone-in or boneless chicken breasts. This will work with chicken thighs, dark meat, or chicken wings as well.
- Olive Oil
- Johnny’s Seasoning Salt
- Lawry’s Garlic Salt
- Montreal Steak Seasoning

How To Smoke A Chicken Breast:
Start by pulling out your chicken breasts and brushing them with oil. Now you can dab them dry with paper towels.
Season your breasts with a dry rub of the seasonings above, a chicken seasoning, spice rub, chicken rub, or your favorite seasoning blend. Some people call this a dry brine; you can also do a wet brine.
You also throw them in a Ziploc bag to pull out later. (If you want a wet brine recipe this one ->here is my favorite)
Now, one of the important steps is to allow the boneless breasts to come to room temperature. This helps them smoke better as they will take in the smoke flavor better.
Start your smoker up and get it rolling, smoke. I used Pit Boss Grills Mesquite pellets but you can use any flavor of pellets to smoke your chicken, everyone has opinions on what the best wood pellets for smoky chicken are.

Once I get my Pellet Grill rolling smoke, I set it at 225 degrees with the P Setting at P7.
You can cook at a hotter temperature if you are in a hurry, but 225 on my Pitboss is my sweet spot. The lower temperature and indirect heat give me the best results for the best-tasting and juiciest smoked chicken breasts without too much smoke. Low and slow also seems to be the convenient way for me to get the best chicken breast. This is most of the smoking process in the cooking process of this easy recipe; it adds so much flavor depending on the cooking time.
It is important to note you can make this on any smoker, a Traeger smoker, Charcoal Smoker, a gas grill, an electric smoker, or a charcoal grill. The cooking time will vary based on how it is cooked, but also on the size of the breasts if it’s a whole chicken, and the cut of chicken. Just be sure to know how your smoker smokes and to use a water pan or aluminum foil if needed.

Place the chicken breast on the Pit Boss grates or racks.
Flip your meat as needed to ensure both sides cook evenly.
When nearing done cooking, use an instant-read thermometer or meat thermometer to check the temperature of the meat at the thickest part of the breast. You want this to be at an internal temperature of 165 degrees or higher with the temperature probe or probe thermometer. Large chicken breasts will take longer to cook. How Long To Cook Chicken Breast On Pit Boss
The short of it is, there is no set time. With smoking and grilling, you always grill to a certain temperature; in this case, chicken is done at 165 degrees. This is the internal temperature at the thickest part of the chicken breast meat.

How do you Store leftover smoked Chicken breast
Store leftovers in an air-tight container or a ziploc bag. Store in the fridge for up to three days after cooking. You can freeze for up to three months. I shred mine before freezing to reuse in other recipes.
Storing leftovers properly requires the right tools! My preferred storage method is if the leftovers can be sealed in a food saver. If not, then an air-tight container or Ziploc bag for the fridge is the way I go. The air-tight container and a freezer Ziploc bag are the next best bet for freezing the leftovers. I also use a food scale to measure portions and divide them into serving sizes.
