How To Make Smoked Coca-Cola Chicken Leg Quarters:
To start, you need a large plastic container or bucket with a lid.
Place your chicken in the container and pour 2 liters of Coca-Cola over the chicken quarters. We have a 2.5 Gallon Rubbermaid Container, perfect for marinating meat and leftovers.
Next, add the rest of the ingredients to the container on top of your chicken.

Use a whisk or shake the container well to mix everything up.
Add next into the container your ice and make sure the chicken is fully submerged in the Coca-Cola brine mixture. (You may need to add more Coca-Cola)
Store in a fridge or cooler and allow the chicken to brine for at least 24 hours before smoking.
Be sure to keep checking up on the chicken you may need to keep adding ice to the mixture to keep the chicken cold. The chicken staying so cold helps the brine absorb into the chicken faster!
Start your smoker up with the water and wood chips to get good smoke going before putting in your chicken.

Spray your smoker racks with a non-stick spray or rub them with olive oil, this helps the chicken to not stick to it.

Place your chicken on the racks in the smoker. I maintain your smoker at about 225 degrees and smoke for about 3 hours.
*Be sure to use a food thermometer to make sure your chicken is cooked to the right temperature of 165 degrees or higher*
Remove and serve!
