The main entree is almost always one I smoke. During the holiday season, I tend to buy extra prime ribs, hams, and turkeys so we can have a big holiday dinner just because later in the year. They never fail to disappoint at any time of the year. If you have issues finding Prime Ribs you can grab one from Snake River to be shipped right to your door, or Turkey and Hams from Omaha Steaks.

I have fallen in love with using my pellet grill and the convection oven factors of it to add smoke flavor to my side dishes as well. Plus it frees up the oven and also if you are trying to avoid holiday guests you can be outside tending the smoker all day as well.

Now the best part of the holidays is the leftovers! The meat makes great other meals and dishes for the rest of the week! I take my prime rib and freeze any leftovers to use later on. Trust me buy the biggest size of roast, turkey, or ham so you will have the leftovers no regrets will ever be had.
