These Smoked Loaded Cheesy Potatoes are perfect for any smoked meat. Now, I am most definitely a meat and potatoes kind of guy, but even better if bacon is involved. These were a hit with adults and kids.

Loaded potatoes are always one of my favorites, we usually have them as mashed potatoes, but this casserole was the perfect side dish. I love to smoke low and slow, so having a side dish to smoke alongside meat like Prime Rib is the perfect smoking combination! Also, these potatoes are easy to make with steaks to not just Prime Rib. I smoked this on my Pitboss Pro 1100.

I made this to pair with my Snake Rivers Farms Prime Rib (you can order one ->here) and Smoked Macaroni And Cheese. The rub I used was my easy smoke Prime Rib; you can get the recipe -> here.

How To Make Smoked Loaded Cheesy Potatoes:
While you are peeling your potatoes, start a pot of boiling water for your potatoes.
Cut up your potatoes into chunks for easier boiling.
Boil the potatoes until they are ready to be mashed up.
Start your smoker rolling smoke if you aren’t already smoking other food.
Strain your potatoes and allow them to drip dry in an over kitchen sink strainer.
Place the butter, cream cheese, bacon, garlic, salt, and pepper in your mixing bowl.

Dump the strained potatoes into the mixing bowl, and start the mixer to mix at low.
Once it has mixed quite a bit, add more milk if needed and add in some cheese.

Spray a casserole pan with a nonstick spray; the pan I cooked in was a 4.8 Quart Pyrex. If you are using glass, it will be stained, so use one that is okay if it gets stained by the smoker.
Spread the mashed potatoes into your casserole pan and top with more cheese, some bacon, and cut green onions.

Smoke for about an hour if smoking at 225 degrees. If smoking at a lower temperature, the time will increase, and the cooking time will decrease if smoking at a higher temperature.

You can tell when the casserole is done cooking when the cheese will be melted.

I mean, beef and potatoes, is there a better food combination? I plan to make this with steaks the next time!

Other Options To Put In Cheesy Potatoes:
- Jalapenos
- Bacon Crumbles Or Bits
- Shredded Cheese
- Kielbasa
- Leftover Smoked Ham Diced
what to serve with smoked Loaded cheesy potatoes
Seriously the sky is the limit, and you can even serve these as is, I have been known to make them and eat them! My personal favorite is to serve the potatoes with red meat, but I am a meat and potato-kind of guy. The first time I made them, I served them with smoked brisket, a total win!
How To Store Leftover Loaded Cheesy Potatoes
Store in an air-tight container in the fridge for up to 5 days. The pyrex pan that I smoke min in has a lid that works great for this. You could freeze them, but I have not been a fan of how they are after freezing.
Best Way To Reheat Smoked Cheesy Potatoes
You can throw these in the microwave and reheat them this way.
The oven is the best way to reheat your potatoes evenly. Pull the potatoes you want to reheat from the fridge and allow them to reach room temperature. Either cover the potatoes with foil or an oven-safe lid. Allow them to reheat for about 15 or 20 minutes until warm.
