Dutch Oven Smoked Turkey Chili Recipe is perfect for leftover turkey! I love to get big turkeys and make recipes out of the leftover meat. This year was no exception! And let’s face it the day after a holiday the thought of making food again is not appetizing.

Now, smoking foods is nothing new, but I have fallen in love with using my Pit Boss Pro 1100 as more of a convection oven. However, it gives the added bonus of smoke flavor!! I picked up mine at Lowes, but Walmart and Amazon carry other Pit Boss options or Pit Boss website themselves. It is even better if I could use leftover smoked meat in the dish. Now I used my Smoked White Chicken Chili recipe to make this and it did not disappoint at all!

Smoked Turkey Chili Ingredients:
Cooked Smoked Turkey– You can use a combination of white and dark meat of leftover smoked turkey if you want.

How To Make dutch oven turkey chili
Start out with leftover shredded turkey. I love to smoke a turkey, my brined turkey, Jack Daniels Brined Turkey, and dry-rubbed turkey are perfect for this!!
Start up your smoker to get the smoke rolling! I set my Pit Boss Pro 1100 to a smoke setting of P7 for the smoke setting. I also closed the chimney stack to allow more smoke to stay in the smoker. This time around I used mesquite pellets to smoke my chili.

If you use a preseasoned cast iron Dutch oven, wipe it down with oil to help make sure that it is ready to cook without having stuff stick. I use an old cast iron Dutch oven the old lady picked up for $5, which has worked amazingly well!
An Enameled Cast Iron would work, but the smoke would stain the enamel of the Dutch oven. Also, be sure to know How To Season Your Cast Iron. (You can see my post-> here!

Using a strainer, strain your white beans and add them to your dutch oven. (If your beans have a flavored sauce dump those into the Dutch oven as is.)
Shred your turkey and place it into the Dutch oven.
Cut up your onion; you can use red onion or yellow onion in this and add it to the dutch oven.
Add your chili green to the mixture in the dutch oven.
Season with your cumin, salt, peppercorns, and cayenne pepper to your taste.
Pour in broth and water until it is well covered and give it a good stir to mix everything together.
Once your smoker is ready take it out to your smoker and allow it to smoke. You will not be using the lid or cover at all for this recipe.
First I allowed mine to smoke on the smoke setting for a half hour then turned it up to 225. I allowed it to slow smoke and cook for 4 hours at 225 degrees.
Remove and serve when ready!!
* You can thicken up the chili if you want with 1/4 cup of corn starch and 1 cup of hot water in a small bowl and then mix into the chili a half-hour before serving. If you do not want cornstarch and milk, you can use a roux to thicken the chowder. Use equal parts butter and flour. Next, melt the butter in a saucepan or microwave. Slowly mix in the flour.*
How TO store Leftover Turkey Chili
Store in an airtight container in the fridge for 4 to 5 days. You can freeze it in an airtight container or bag in the freezer for up to three months. Reheat in the microwave or stovetop to eat.
Storing leftovers properly requires the right tools! My preferred storage method is if the leftovers can be sealed in a food saver. If not, then an air-tight container or Ziploc bag for the fridge is the way I go. The air-tight container and a freezer Ziploc bag are the next best bet for freezing the leftovers. I also use a food scale to measure portions into serving sizes.

- 15.5 ounce Cannellini Beans
- 29 ounce Chicken Broth
- Onion

- 1/2 Teaspoon Cayenne Pepper
- 2 Teaspoon Cumin
- Oregano
- Pink Himalayan Salt
- Ground Black Pepper
- 15.8 ounce Great Northern Beans
