The smoked Shredded Pork Baked Beans were a total hit as a side dish last week.  But honestly, they even make a whole meal, and you won’t want to share them. Baked beans are one of those side dishes that just yell bbq and summertime at me!

These beans can be made in any type of smoker either electric, charcoal, or pellet.  I use my  Pit Boss Pro 1100 as more of a convection oven. Soups, beans, and stews are always my favorite dinner in the fall and winter months, but the smoker gives the bonus of smoke flavor, as well as slow-cooked tenderness.  I picked up my Pitboss at Lowes, but Walmart and Amazon carry other Pit Boss options or Pit Boss themselves..

Smoked Shredded Pork Baked Beans Ingredients:

  • Smoked Pork Shoulder
  • BBQ Sauce
  • Minced Onion
  • Brown Sugar
  • White Vinegar
  • Bush’s Chili Beans-I used 27 Ounce can
  • Bush’s Butter Beans-I used 16 Ounce can
  • Bush Baked Beans-I used 28 Ounce can
  • Ground Beef
  • Bacon
  • Minced Garlic
  • Ketchup
  • Brown Mustard

How To Make Shredded Smoked Pork Baked Beans On A Pitboss:

Start out with leftover smoked pork and shred it. (If you need a smoked pork recipe check out my recipes ->here)

Coat the shredded leftover smoked pork in bbq sauce and store it in the fridge overnight, this helps to add to the flavor of the pork but you can skip bbq sauce if you prefer.

You can pull as large chunks of fat to cook in the beans, I did that but then removed the pieces of fat as I served the beans.

Dice up your bacon and cook it in a small fry pan.

*I don’t fully cook my bacon because I know it will cook some in the dutch oven so know how you like your bacon and prep it accordingly*

Now, I have a friend who is also a food smoker who calls these cowboy beans!  Whether they call these Cowboy beans or loaded baked beans, they are amazing is all I know or care about!

Start up your smoker to get the smoke rolling! I set my Pit Boss Pro 1100 to a smoke setting of P4 for the smoke setting.  This time around, I used Mesquite Pit Boss Pellets to smoke my beans. (Yes, Walmart is my go-to for pellets. I order enough for free shipping so they are delivered!)

Money and time saving tips from the old lady. If you order pellets online from Walmart and spend $35, they will drop them off at your door for free!! Their everyday price on pit boss pellets is amazing, plus the expert grill brand has a great price. (see them ->here)

Oil Inside the Pan Of Dutch Oven

If you use a preseasoned cast iron dutch oven, wipe it down with oil to help make sure that it is ready to cook without having stuff stick. I use an old cast iron dutch oven the old lady picked up for $5, and has worked amazingly well! An Enameled Cast Iron would work, but the smoke will stain the enamel of the dutch oven.  Also, be sure to know How To Season Your Cast Iron as well.

Open your can of butter beans and strain and rinse the juices off of them.

For the remaining beans open them up and drop scrape the beans with sauces into the dutch oven.  The sauces add to the flavors of the baked beans and the thickness of them.

Add in your meat next you can drop in more bacon grease if you want to for extra flavoring.

Next, add in the remaining ingredients and stir everything together.

Set the entire dutch oven on your smoker once you are rolling smoke without a lid so the smoke can saturate the beans.

Stir the beans every 30 minutes or so to make sure they cook evenly and the smoke flavor penetrates everything.
