This Jack Daniels And Coca-Cola Smoked Pork Shoulder Roast turned out amazing!! Now I haven’t deviated much from my Smoked Pork Shoulder Roast rub, but this time my favorite cocktail helped to smoke the meat.

I made this for the first time in 2021, on my Pit Boss Pro 1100, which is my favorite way to cook low and slow! I picked up my Pit Boss Grill at Lowes, but Walmart and Amazon carry other Pit Boss options or the Pitboss website. I love the cost of them vs. other pellet smokers, plus it hasn’t disappointed me yet.

How To Make Jack And Coke Meat Injection
I recommend injecting and rubbing your pork shoulder roast at least 24 hours before smoking. This allows the roast to absorb the flavor and tenderize the meat.
I put my roast in a large 2.5 gallon Tupperware to rub it in and inject it. You will want the container to cover it and store it in the fridge.
In a deep Pyrex measuring bowl, I mixed the injection ingredients until the sugar and salt dissolved. Pour yourself a Jack and Coke if so inclined.

Now, your smoking tools are just as crucial as a good smoker; I have gone thru several plastic injectors over the years! I ordered a Metal Injector off Amazon, and has worked like a champ on turkey, brisket, and roast!
Use an injector to inject the Jack and Coca-Cola mixture into your roast. I flipped mine over and applied the injected liquid to all sides. Unlike brisket, there isn’t really a fat side to the pork to worry about.
Mix all of the dry spices in a small bowl or a mason jar.
Be sure to coat the whole roast; the rub will turn almost into a paste with the injection as well.

Cover with an airtight lid and store in the fridge. (The old lady has these 2.5-gallon large Rubbermaid containers that are perfect for this; similar ones are -> here on amazon or a large stockpot would work)
How To Make Jack Daniels And Coca-Cola Smoked Pork Shoulder Roast:
The day you are ready to smoke your roast pull it out and allow it to reach room temp before smoking it. I let my roast rest for about an hour.
Now, this is where it pays to know how your smoker cooks and how you like to smoke. I like to do a low, slow smoke using the smoke setting on my Pit Boss Pellet Grill.
Start up your smoker to get the smoke rolling! I set my Pit Boss Pro 1100 to a smoke setting of P4 for the smoke setting. This time around, I used Mesquite Pit Boss Wood Pellets to smoke my roast.
Money and time-saving tips from the old lady. If you order pellets online from Walmart and spend $35, they will drop them off at your door for free!! Their everyday price on pit boss pellets is amazing, plus the expert grill brand has a great price. (see them ->here)

Your smoke times will vary, but I smoked mine for 4 hours at 200 degrees, then 2 1/2 hours at 225 degrees, and then at 250 for another 1 hour.
If your grill smokes hotter on one side you will want to set it on the lower temperature side on the grill grates for smoking.
I wanted to smoke lower and slowly, but life with kids happened, so I moved up the cooking time, and the results were still excellent!
When your roast has reached an internal temperature using the probe of a meat thermometer of at least 165 degrees, pull the roast out and allow the roast to rest before cutting into the roast! You can cook the roast to 180 degrees to make it more tender just keep an eye on how it is falling apart.

The meat will shred perfectly for smoked pulled pork or any pulled pork recipe! Perfect to put in coleslaw, mix with hickory barbecue sauce, pork sandwiches, in tacos, on pizza, or on nachos.

Serve and enjoy!
Alternate Ingredients For Smoked Pork Roast
- Yellow Mustard as a binder
- Cherry pellets
- Apple Juice
- Apple Cider Vinegar
How To Store Leftover Pork Shoulder Roast
Store in an air-tight container or bag for up to 4 days in the fridge. Place in refrigerator after it has cooled. You can freeze smoked pork shoulder roast for up to three months in an airtight container or bag.
Storing leftovers properly requires the right tools! My preferred storage method is if the leftovers can be sealed in a food saver. If not, then an air-tight container or Ziploc bag for the fridge is the way I go. The air-tight container and a freezer Ziploc bag are the next best bet for freezing the leftovers. I also use a food scale to measure portions and divide them into serving sizes.
