This Blackstone Sausage And Peppers Recipe is the perfect easy weeknight dinner for the family! I love those easy dinners that it is cut, cook, and serve. There is no hard prep to this easy dinner.

Busy weeknights and easy meals are always how it seems to roll in my house! I love that the only thing I have to pick up most nights for this recipe from the grocery store is the sweet bell peppers. The whole family loves this. Even the picky teenage girl loved it! Plus, it works out to be a low carb meal as well.
Sausage And Peppers Ingredients
- Garlic sausage links
- Olive Oil
- Red Bell Peppers
- Green Bell Pepper
- Orange Bell Peppers
- Yellow Bell Peppers
- Yellow Squash
- Zucchini
- Red Onion-You can use a white onion or yellow onion for this, but we are huge red onion/purple onion fans.
- Garlic Salt and Black Pepper
- Smoked Paprika
Now you can use different colors of bell peppers or just one color, we opted for all the colors, and the taste turned out fantastic.

How To Make Blackstone Sausage And Peppers
*If you don’t have a Blackstone griddle this can also be made as a skillet in an electric skillet or a large skillet as well. *
Start by cutting the bell peppers, red onion, yellow squash, and zucchini. For the bell pepper, I cut off the bottom and then created my slices of the peppers on a cutting board that way. The combination of the peppers is full of so much flavor and a great way to flavor

Slice your sausages into about 1-inch thick rounds.
Place all the sausage and vegetables in a large container or a large bowl.
Drizzle the sausage and peppers with your olive oil and seasonings.
Use a large spoon, or a spatula to mix it up, or if the container has a lid shake the container to coat the food with the oil and the seasonings evenly. We chose to do a container so it could be shaken to season the vegetables and sausage.
Fire up your Blackstone griddle and re-oil it down. I always keep mine ready to go, so all I have to do is turn it on and re-oil it. (Check out my tips for Caring For Your Blackstone -> here)
Turn the burners of your Blackstone Griddle to medium heat.

Once your griddle is hot, throw everything from the container onto the griddle. I tested this by dropping a slice of zucchini on the griddle. When it sizzled, I knew the griddle was hot enough to cook.
If your sausage is fully cooked the blackstone is reheating the meat to be served. If your sausage is not fully cooked, it will need to cook longer until the correct food-safe temperature is reached it needs to cook. Allow the uncooked sausage to cook longer before adding in the vegetables for this recipe.
Stir often and cook for about 15 minutes.

If the food starts to stick to the griddle surface, add a bit more vegetable oil.
Once the vegetables are cooked and the sausage is fully reheated, remove and serve. Sausage should always be heated to an internal temperature of 165°F

Serve with any of these to make a complete meal and a quick meal. I paired mine up with Jasmine Rice from the rice cooker.

How To Store Leftover Sausage and Peppers
Allow to cool and store in the fridge in an airtight container for up to three days.
How To Reheat Leftover Sausage and Peppers
You can reheat the peppers and sausage in the microwave.
On the stove, warm up a large skillet on medium-high heat. Place the leftovers in a hot skillet, and cook the peppers and sausage for a couple of minutes until they are warmed back up.
Right on the Blackstone griddle, I did this when I made leftovers into a quesadilla. Fire up the Blackstone to medium heat when the griddle is heated, and throw the leftovers on until it is reheated. This was the perfect next day lunch recipe and a great way to use up the leftovers.
