How to grill zucchini?? Well, let me tell you how easy it is… Slice your zucchini and oil, add some seasoning, and cook on the grill! Plus, it’s such an easy vegetable side dish to make!!

Now, even though we can get summer year-round, in the winter time, the skin can be a bit tougher. We are lucky to be able to get them at our local farm stands almost all year. This easy-grilled side dish can be made with any grilled main dish.

How To Grill Zucchini
Slice your zucchini long ways in halves and trim off any of the stems.

Drizzle some olive; I have used garlic oil before.
Use a basting brush to brush the oil over the zucchini halves, not on the skin side.

Season to taste with your seasonings.
Fire up your grill to medium-high heat. You can cook on a lower heat, but grilling zucchini on a high heat will cook these too fast.
Place the zucchini and peel side down on the upper rack of your grill. If you place the inside of the zucchini down first, it will overcook, and the skin will take longer to cook on the grill.

The grilled zucchini halves about ten minutes and flip.
To get grill lines, you can move them to the bottom.
Serve and enjoy!

How To Store Grilled Zucchini
I am not fond of leftover grilled zucchini, so we try to make the right amount. You can store in the fridge in an air-tight bag or container for up to three days. This will not freeze well after cooking.
How To Reheat Grilled Zucchini
You can reheat leftover grilled zucchini in the microwave, oven, in a frying pan, or on the grill on low.

Oh I am definitely going to have to try this! Yum! We often grill our zucchini with a bunch of other veggies in a grill basket but this sounds much easier.
