This Crockpot Prime Rib Chili recipe is the perfect way to use leftover Prime Rib. Every year we make a prime rib for our holiday dinner. While we do a lot of French Dips with the leftovers sometimes its nice to change it up.

Plus the leftovers are amazing as well, though I have to say this chili is my new favorite way to use up leftover prime rib!
Crockpot Prime Rib Chili Recipe Ingredients:
- Leftover Smoked Prime Rib
- Black Beans
- Pinto Beans
- Chili Beans With Sauce
- Red Beans
- Diced Tomatoes
- Water
- Kernel Corn– You can use frozen or canned corn in this recipe, I used canned corn as it can be a bit firmer.
- Tomato Paste
- Better Than Boullion Beef Base
- Red Onion
- Salt
- Pepper
- Onion Powder
How To Make Crockpot Prime Rib Chili Recipe:
Start out by dicing up your prime rib into one-inch chunks for the chili, and dice your onions as well.
Spray your crockpot with a nonstick spray, now my old lady swearsby this 8-quart crockpot. Now I have used this a couple of times, and I have to say it is quite the trooper when it comes to crockpots.
Drop your diced up Prime Rib into the bottom of the crockpot.

Open your can of corn, black beans, red beans, and pinto beans and strain them in a strainer. You can rinse them off if you want. (I only do this when the beans don’t come with extra sauce or flavoring)
Dump the contents of the strainer into the crockpot and then open up the other cans and start to drop everything else in.

Heat up the 3 ½ cups of water and then mix in your beef bullion till it is dissolved.
Pour the broth mixture into the crockpot.
Add in the seasonings to your taste and give the crockpot a good stir.
Turn your crockpot on low and allow to cook for 4 to 5 hours. (I did stir mine every couple of hours)

Top with sour cream, chili paste, cheese, crackers, or cornbread. (I did all of the above)

How To Store Leftover Chili
Put the chili in an air-tight container and store it in the fridge for up to five days. You can also freeze the chili as well in an airtight container for up to three months.
How To Reheat Smoked Chili
Use a microwave or stove to top reheat the chili to the proper temperature for reheating.

- 32 Ounce Chili Beans With Sauce
- 15 Ounce Red Beans
