Leftover Prime Rib Breakfast Hash

Leftover Prime Rib Breakfast Hash is unique for next-day breakfast! I know what you are thinking… how do you have leftover prime rib? Well, I buy the biggest roast to have leftovers like any other smoked meat.

If you aren’t familiar with Blackstone Griddles, now is the time to consider one! My obsession started with the 17-inch version, but now I have the Blackstone 36-inch griddle that has permanently resided on my back porch.   We take the 17-inch camping, and I take it out on job sites to make lunches for the crew.

How To Make Prime Rib Breakfast Hash:

Fire up your Blackstone and grease it up. If you are new to Blackstone Griddles, check out my tips for How To Care For Your Blackstone. (See the article ->here)

Once your Blackstone griddle or skillet is warmed up and oiled up, turn the heat down.

This is one meal you will want to make sure you have the Blackstone Griddle Accessory kit. The spatulas and scraper will make cooking this meal and clean up a breeze. 

Spread your frozen potatoes out onto the griddle; you will want to get these going first so they can start to thaw and brown.

In a large bowl, whisk together your eggs to be scrambled. I pour about 1/2 cup of water into the eggs to help them be fluffier.

While the potatoes are starting to cook, cut up leftover prime rib. I used the leftover smoked prime rib from Easy Smoked Prime Rib Recipe. (Check it out -> here)

Now I used the pieces from the roast that were rarer as I knew it would cook more on the Blackstone with the reheating process.

Push the potatoes to one side on the other side of the griddle from the meat. 

Spread the meat out onto the other side of the griddle.    

Move the meat over into the potato mixture, and then pour the egg mixture on the other side of the griddle.

The eggs will scramble up in no time, and I move them around with one of the spatulas to ensure they scramble evenly.

Once the eggs are almost entirely cooked, mix them up in your potatoes and meat mixture.

When they are well-mixed, top them with cheese and mix some to melt the cheese into the mixture.

Turn the burners off, and you can top it with more cheese and let it melt.  

Serve and enjoy!

How To Store Prime Rib Breakfast Hash

Store leftover hash in an air-tight container or ziploc. This can be stored in the fridge for up to three days.
