This Blackstone Breakfast Hash Recipe is such an easy breakfast to whip up! Now I love to grill at night so it probably doesn’t surprise you that I love to make breakfast outside too. Now I did a similar version to this camping, so I had to make a big batch at home.

This is one of those great breakfast dishes that can be made for dinner! I am not always a breakfast kind of guy on the weekdays. However, if you are looking for the ultimate hangover cure this is part of it.

Blackstone Breakfast Hash Recipe Ingredients:
- Frozen Potatoes O’Brien– I used one with peppers in them, but you can do either.
- Sausage Rope– Beef, pork, turkey, or kielbasa will work in this recipe.
- Thick Cut Bacon– The thick cut has a good amount of flavor but doesn’t cook too fast on the Blackstone.
- Eggs
- Red Onion
- Green Onion
- Mexican Cheese
My favorite part is that you don’t have to call this breakfast hash. You can call it a breakfast scramble, dirty eggs, potato breakfast, and many other possibilities. While this is a favorite, I love that it is never the same dish and is so easy to change up.

Spread your frozen potatoes out onto your griddle.
In a large bowl, whisk together your eggs to be scrambled. I pour in about 1/2 cup of water into the eggs to help them be fluffier.
While the potatoes are starting to cook, cut up your sausage, onion, and bacon.
Now a good knife is a must-have in any kitchen! Now I was surprised when the old lady picked up a knife on amazon for under $10, but it’s amazing. They have a great selection > here.
Push the potatoes to one side on the other side of the griddle, and I mixed in my onions at this time into the potatoes on the griddle.

Place the bacon on the opposite side of the griddle and turn that burner up so it will cook faster.
Place the sausage in the middle on the low it will cook fast enough at the lower temp.
l, let these cook until the bacon is cooked to the crispiness you prefer.
Move the meat over into the potato mixture, and then pour the egg mixture on the other side of the griddle.
The eggs will scramble up in no time; I move them around with one of the spatulas to ensure they scramble.
Once your eggs are almost finished, mix them up in your potatoes and meat.
When they are well-mixed top them with cheese and turn the griddle off.
I took the time to run in and make toast while the cheese melted.

Serve and enjoy!!

I’ve not ever made this on a grill, but I make it at least once a week atop the stove, regular non-stick frying pan. Only difference in mine is that I use fresh diced potatoes, not frozen, since I always have fresh ‘taters on hand (even sweet potatoes). It;s a great way to use leftovers, too !! Love the video. I swear I could smell the bacon….lol. Oh, another great ingredient suggestion is mushrooms. The possibilities are endless.
I have never had a breakfast hash but that sounds great and so easy to personalize too!
I love breakfast hash since you can use pretty much whatever you have on hand. I like to use sweet potatoes, but my husband would love your version more. Thanks for sharing!
