How To Make Fajitas On A Blackstone Griddle!

Fajitas On A Blackstone Griddle are a favorite at my house! Making food at home is one of my favorite ways to celebrate holidays like Cinco De Mayo! My only regret is not trying it years ago on my Blackstone Griddle.

Now, if you are new to Blackstone or eyeing getting one, let me just say get one. I have the 17-inch Blackstone, which I now use on job sites and when we camp. My back deck has 36-inch Blackstone, which has made many meals. Food just tastes better when cooked on the Blackstone, and the cleanup is a breeze!

Ingredients For Fajitas:
- Meat– Now you can use any kind of meat, chicken, steak, shrimp, or pork, to make fajitas. You will want the meat cubed into small pieces before putting it in the marinade.
- Tequila– You can omit this ingredient if you want, I like to use it to help to flavor and tenderize the meat as well.
- Vegetable Oil–
- Water
- Lime Juice
- Orange Peppers
- Red Peppers
- Red Onion
- Minced Garlic
- Limes
- Fajita Seasoning

How To Cook Fajitas On The Blackstone Griddle:
Now, if you want to take fajita night to the next level, you can make your tortilla using a tortilla press! I have been eying getting one to make my own. If you don’t use the Blackstone to warm your tortillas, I recommend a Tortilla warmer, especially if you are serving a large group!
It doesn’t matter what kind of meat you are using. You will start with a container or a bag to allow the meat to marinate before cooking. If you are using a tougher cut of meat, be sure to marinate longer so the salt and lime can tenderize the meat more.
In a bowl or bag, combine your seasonings, vegetable Oil, water, tequila, and lime juice. There isn’t much measuring; it mostly depends on how seasoned you like your meat.
Allow your meat to marinate, and take the time to cut up your vegetables for the fajitas.

For making Fajitas, I recommend cutting the peppers into quarters and then slicing them into long slices.
When you are ready to start cooking fire up your Blackstone griddle.
Re-oil your griddle; I always re-oil to make sure my griddle won’t stick and cooks well. Be sure to check out -> How To Care For Your Blackstone Griddle.
When your griddle is ready, I turn the heat down low and drop your meat on.

Stir your meat often using the spatulas in the Blackstone Griddle Accessories kit.
When your meat is almost done, mix the veggies into your meat. I made this at the same time as Steak, Shrimp, and Chicken Fajitas, so I spread my veggies with different meat.

Cook until your veggies are tender and your meat is cooked.
Remove and then clean your griddle with the Blackstone Scraper in the Blackstone Accessory kit.
Re-oil your griddle if needed.
Butter both sides of the tortillas shells and throw them on the Blackstone to grill them up.

Remove and serve!

How To Store Leftover Fajitas
After making the leftover meat and vegetables, store them in an airtight container in the refrigerator for up to three days. Be sure to allow them to cool properly before putting them in the fridge.
How To Reheat Blackstone Fajitas
Reheat the flat top griddle on medium-low heat or in the microwave. A skillet on the stove, either nonstick or cast iron, will work as well.

- Taco Seasoning–If you haven’t tried Homemade Taco Seasoning, you are missing out that is my go but I do have packets on hand for when I run out.
- Salt and pepper

- Sour Cream
- Homemade Guacamole
- Salsa
- Pico De Gallo
- Mexican Cheese
- Cilantro
- Green Onion
- Avocado
- Shredded Lettuce
- Shredded Cabbage

- Cook until your veggies are tender and your meat is cooked.
- Remove and then scrape your griddle clean with the Blackstone Scrape.
- Re-oil your griddle if needed.
- Butter both sides of the tortillas shells and throw them on the Blackstone to grill them up.
- Remove and serve!
