Blackstone Pepper and Sausage Quesadilla

Blackstone Pepper and Sausage Quesadilla have quickly become one of my new go-to quick meals! Often when I am whipping up meals on the Blackstone, I make too much, so there are leftovers (Don’t tell the family I do this on purpose) I love to make leftover meals, and Quesidallas is one of those meals that work for either a quick dinner or for an easy lunch. Plus, it’s another excuse to grill, right?

Now if you are unfamiliar with the Blackstone, let me tell you that they come in a couple of different sizes. I have the 17-inch for the job site and camping, but we also have the 36-inch Blackstone that gets used weekly at home! If you don’t have a Blackstone have no fear. You can still make this in a skillet pan or on an electric griddle. But seriously you need the Blackstone!

Blackstone Pepper and Sausage Quesadilla Ingredients

  • Sausage and Peppers– You can use leftover sausage and peppers as I did or whip them up fresh. Check out my sausage and peppers recipe->here.
  • Tortilla – I used a flour tortilla to make my quesadilla, but you can use whatever style you want.
  • Slices Provolone Cheese– You can use any cheese to make your Quesadilla, I used slices of cheese to contain my mess while assembling the quesadillas.

How To Make Blackstone Pepper and Sausage Quesadilla

*If you don’t have a Blackstone griddle, this can also be made as a skillet in an electric skillet or a large skillet as well. *

Start with your cooking peppers and sausage if you don’t have leftovers. (If you want in-depth directions, check out the post -. here)

Quick Guide/Summary: Slice your peppers, sausage, zucchini, and yellow squash. In a container coat with a bit of olive oil and sprinkle with salt, pepper, and smoked paprika. Saute and grill on your hot Blackstone Griddle.

If using leftovers, I had leftover sausage and peppers; fire up your Blackstone griddle and re-oil it down.  I always keep mine ready to go, so all I have to do is turn it on and re-oil it.  (Check out my tips for Caring For Your Blackstone -> here

Turn the burners of your Blackstone Griddle to medium heat.

Once your griddle is hot, put the leftover sausage and peppers on the griddle. *Or make the peppers and sausage now*

Allow them to warm, and then place a tortilla on the griddle.

Use a long spatula to put the sausage and peppers on half of the tortillas.

Top with two slices of provolone cheese, or sprinkle with shredded cheese.

Fold the tortilla over and then flip the quesadilla when it starts to be golden brown on one side.

While cooking on the other side you can use the melting dome to help the cheese melt and become gooey.

Remove and serve!

How to store leftover Blackstone Griddle quesadillas

Ensure the quesadillas have completely cooled before you place them in the fridge. If they are not cooled off, they will sweat and become soggy. Once cooled, you can store them in an airtight container in the fridge for up to three days or freeze them for up to a month.

How To Reheat Blackstone quesadillas

You can reheat Blackstone Quesadillas right on the Blackstone or in a skillet on the stove. These are also okay to reheat in your microwave as well.
