Start out with your cooking peppers and sausage if you don't have leftovers.
If using leftovers, I had leftover sausage and peppers, fire up your Blackstone griddle and re-oil it down.
Turn the burners of your Blackstone Griddle to medium heat.
Once your griddle is hot, put the leftovers on the griddle.
Allow them to warm and then place a tortilla on the griddle.
Use a long spatula to put the sausage and peppers on half of the tortillas.
Top with two slices of provolone cheese, or sprinkle with shredded cheese.
Fold the tortilla over and then flip the quesadilla when it starts to brown on one side.
While cooking on the other side you can use the melting dome to help the cheese melt and become gooey.
Remove and serve!
