Leftover Smoked Prime Rib Quesadilla On A Blackstone Griddle is such an easy leftover prime rib dinner or lunch! Now, when we smoke meat, I always work to have some for leftovers, prime rib included! I mean, what better way to make a leftover on the Blackstone Griddle, easy to make and delicious to eat!

If you aren’t familiar with Blackstone Griddles now is the time you need to consider one! My obsession started with the 17-inch version, but now I have the Blackstone 36 inch griddle that has taken up permanent residence on my back porch. We take the 17-inch camping and I take it out on job sites as well to make lunches for the crew.

Now, if you are a Blackstone owner or new to Blackstone, there are several accessory options!! For making Spam Fried rice,e the bigger spatulas are very helpful, and the scraper as well for this. I use my squeeze bottles to keep extra water and oil easily accessible to put on the griddle.

How To Make Prime Rib Quesadilla On Blackstone Griddle:
Prepare your Blackstone Griddle with a fresh bit of oil, if you are not sure How To Maintain Your Blackstone Griddle please check out this post -> here. Mine is always ready to go after it’s been used, making for little to no prep work.
Slice up or tear up your prime rib, I used rarer pieces as I knew it would cook some in the process. (I used some leftover smoked prime rib from my Easy Prime Rib Recipe ->HERE)
If your prime was in the fridge then microwave it for about 30 seconds or warm it up in a pan to make sure it will be warm after cooking your sandwich.
Spread out your tortilla; if you want, you can put on some horseradish sauce onto the tortilla.

Next, spread out the prime rib and then top with shredded cheese.
Fold the tortilla in half around the meat and cheese.
Fire up your Blackstone to low-medium heat and add a bit of oil if necessary.
Once your griddle is warm, place the folded-in-half tortilla onto the griddle and allow to cook.

When the side of the tortilla on the griddle starts to brown, flip the tortilla over to cook the other side.
Remove and serve when the other side is cooked as well.

How to store leftover Blackstone Griddle quesadillas
Ensure the quesadillas have completely cooled before you place them in the fridge. If they are not cooled off, they will sweat and become soggy. Once cooled, you can store them in an airtight container in the fridge for up to three days or freeze them for up to a month.
How To Reheat Blackstone quesadillas
You can reheat Blackstone Quesadillas right on the Blackstone or in a skillet on the stove. These are also okay to reheat in your microwave as well.
