Brisket Quesadilla On A Blackstone Griddle is such an easy leftover brisket dinner or lunch! Now when we smoke meat, I always work to have some for leftovers! Our last smoked brisket the last time was no exception.

My obsession started with the 17 inches version but now I have the Blackstone 36 inch griddle that has taken up permanent residence on my back porch.   We take the 17-inch camping and I take it out on job sites as well to make lunches for the crew.

How To Make Brisket Quesadilla On Blackstone Griddle:

This can also be cooked in a large skillet, an air fryer, or on an electric griddle as well. Flat top grills work perfectly for meals like this but sometimes the weather can change the plans.

Now you could cheat and do brisket quesadilla at Chilis, and yes the old lady saw them on the menu there.   And yes that got her begging for us to make a brisket to make these at home!  

Prepare your Blackstone Griddle with a fresh bit of oil, if you are not sure How To Maintain Your Blackstone Griddle please check out this post -> here.  Mine is always ready to go after it’s been used, making for little to no prep work.

Shred your brisket to put into the quesadilla; I microwaved mine for about 30 seconds since it had been in the fridge overnight from being cooked the night before.

Flour tortilla with shredded brisket, shredded cheese and bbq sauce.

Spread out your tortilla and on half of the tortillasprinkle with cheese, then top the cheese with brisket.

Top with more cheese, and then drizzle with some bbq sauce. 

Fold the tortilla in half around the meat and cheese.

Fire up your Blackstone to low-medium heat and add a bit of vegetable oil or olive oil if necessary.

Once your griddle is warm, place the folded-in-half tortilla onto the griddle and allow to cook until golden brown.

When the side of the tortilla on the griddle is starting to brown, flip the tortilla over to cook the other side. 

Remove and serve when the other side is cooked as well, and the cheese melts.

How to store leftover Blackstone Griddle quesadillas

Ensure the quesadillas have completely cooled before you place them in the fridge. If they are not cooled off, they will sweat and become soggy. Once cooled, you can store them in an airtight container in the fridge for up to three days or freeze them for up to a month.

How To Reheat Blackstone quesadillas

You can reheat Blackstone Quesadillas right on the Blackstone or in a skillet on the stove. These are also okay to reheat in your microwave as well.

This Brisket Quesadilla is perfect to make on your Blackstone Griddle! Leftover smoked brisket recipes are always a hit and the easier the better! Add in bbq sauce to add more bbq flavor or a jalapeno sauce to kick up the flavor!

Instructions
 

  • Prepare your Blackstone Griddle with a fresh bit of oil.

  • Spread out your tortilla and sprinkle with cheese, then top the cheese with brisket.
  • Top with more cheese and then drizzle with some bbq sauce.
  • Fold the tortilla in half around the meat and cheese.
  • Fire up your Blackstone to low-medium heat and add a bit of oil if necessary.
  • Once your griddle is warm place the folded in half tortilla onto the griddle and allow to cook.
  • When the side of the tortilla on the griddle is starting to brown flip the tortilla over to cook the other side.
  • Remove and serve when the other side is cooked as well.
