Sometimes they have legs to keep them over the fire a bit more or coal Some dutch ovens come with a flat lid to pack on more coal, or they make a tight seal so you can pack coal around it if needed.
How To Prepare Your Dutch Oven For Smoking:
If you are using a cast iron dutch oven wipe it down with oil so as to help make sure that it is ready to cook without having stuff stick. I use an old cast iron dutch oven the old lady picked up for $5 and has worked amazing! An Enameled Cast Iron would work as well just know that the smoke may stain the dutch oven.
When you wash your cast iron do not use soap, we use steel wool to get out any food debris then re-oil down for storage this will keep your cast iron conditioned for cooking next time.
How To Smoke Chili In Your Smoker:
Start up your smoker to get the smoke rolling! I set my Pit Boss Pro 1100 to a smoke setting of P4 for the smoke setting. I also closed the chimney stack to allow more smoke to stay in the smoker.
Now for the cooking part of the chili, I like to set my smoker at 225 and allow it to roll low and slow. You can cook at a higher setting
