Blackstone Griddle Chicken Fajitas Recipe

Chicken Fajitas is one of those dishes I can make at home, and the whole family will eat it! I mean, chicken is one of the proteins that even the pickiest of eaters will also eat. Now making them at home allows you to make a bigger batch for a fraction f the price you would pay in a restaurant.

Now, typically I grill up my chicken meat on the grill for my chicken fajitas. I have to say, now that I have done them on my Blackstone griddle, I don’t think I can do them any other way.   Using boneless chicken will make for the smoothest chicken fajita experience.  You can also grill them up on the Blackstone grill alongside Steak Fajitas and Shrimp Fajitas.

How To Make Chicken Fajitas On The Blackstone:

Start with a container or a bag to allow the meat to marinate before cooking.

In a bowl or bag, combine your Taco Seasoning, Fajita seasoning, Chili Lime Seasoning, Olive Oil, water, Tequila, and lime juice.  There isn’t much measuring it mostly depends on how seasoned you like your meat.

Slice up your chicken breasts into strips, you can use chicken thighs just know that the fajitas will be greaser when you cook them than if you use chicken breasts.

Allow the chicken to marinate in Fajita marinade for at least a couple of hours to overnight. I allowed mine to sit for about four hours.  The marinating will allow the meat to tender from the tequila and the lime.

Before you are ready to fire up the griddle, cut up your peppers and onions.

 For Fajitas, I recommend cutting the pepper into quarters and then slicing them into long slices.

Slice your onions into long thing sides as well.

When you are ready to start cooking, fire up your Blackstone griddle.

Reoil your griddle; reoiling ensures that it won’t stick and will cook well.

When your griddle is hot and ready to cook, turn the heat down on low.

Turn your heat down to low and drop the meat and marinade onto the griddle.

Stir your meat often using the spatulas in the Blackstone Griddle Accessories kit.

When your meat is almost done, mix your veggies into your meat. I made this at the same time as shrimp fajitas and steak fajitas, so I spread my veggies out amongst those.

Cook until your veggies are tender and your meat is cooked.

Remove and serve!

How To Store Leftover Fajitas

After making the leftover meat and vegetables, store them in an airtight container in the refrigerator for up to three days.   Be sure to allow them to cool properly before putting them in the fridge.

How To Reheat Blackstone Fajitas

Reheat the flat top griddle on medium-low heat or in the microwave. A skillet on the stove, either nonstick or cast iron, will work as well.

  1. Oh, this looks and sounds delicious! Whenever we go to a Mexican restaurant, we usually order fajitas because we get the most bang for our buck. We usually split it, and still take home leftovers.
