Smoked Brisket Chili Recipe In The Slow Cooker

This Smoked Brisket Chili Recipe In The Slow Cooker is the perfect leftover recipe! As much as I love to smoke meat it is almost always a given that I will have meat leftover. I mean you go big or go home, right?

A couple of weeks ago, I had an accident at Lowes! I am now the proud owner of a Pit Boss Pro Series at Lowes if you don’t have Lowes Walmart and Amazon carry other Pit Boss options, or Pit Boss website themselves. Let me say that the Smoked Brisket was amazing, and the chili made out of the leftovers was just as amazing!
Leftover Smoked Brisket Chili Recipe Ingredients:
- Smoked Brisket
- Minced Garlic
- Black Beans
- Corn
- Beer– Any brand of beer that you like in this. My favorites include pale Mexican lagers like Corona
- Diced Tomatoes
- Chili Beans With Sauce
- Chili Pinto Beans With Sauce
- Red Onion
- Beef Broth Base
- Brewed Coffee

How To Make Smoked Brisket Chili Recipe:
The night before cooking the chili, or the night after you make a Smoked Brisket, chop the brisket into small pieces. I cut strips of the fat to throw into the chili to add more smoked flavor.

Put it in a bag to store for the next day. This was the batch I made for the kids; the rest went into my Dutch oven and smoked into a spicier chili. (See the Spicy Smoked Brisket Chili Dutch Oven Recipe -> here)
Spray the cooker with a nonstick spray. I used an 8 Quart Crock-Pot to make this in.
Now I used Better Than Bouillon Beef Base to make my broth, which I mixed with the coffee. Brew your cup of coffee (I used a Seattle Best Coffee Breakfast Blend K-Cup for my coffee)
*If you are using a beef broth, then you can just pour it into your crockpot.*
Pour in your beer. I used a Bud Light to make mine with! Don’t worry, the cooking cooks out the alcohol, just leaves flavoring, and helps to tenderize the meat more.

In a strainer, pour out your can of corn and any of the beans that don’t come in a flavored sauce.

Begin to drop everything into your crockpot. Since this was the kids’ batch, I kept it slightly basic, knowing the seasoning on my brisket would add flavor to the dish.
Turn the Crockpot on low and allow it to cook for 6 hours.
Serve and enjoy!!

How to Store Leftover Brisket Chili
Store in an airtight container in the fridge for 4 to 5 days. You can freeze it in an airtight container or bag for up to 3 months. Reheat in the microwave or on the stovetop to eat.
