Smoked Turkey Chowder Recipe

This Smoked Turkey Chowder Recipe is perfect for using any leftover smoked turkey! I am a firm believer that if you smoke meat, do enough to have leftovers for more dishes.  While leftover turkey is amazing as a sandwich, I love to make whole meals out of it. And let’s face it, any smoked turkey soup hits the spot!

Being a midwestern man, I grew up with most meals cooked on Cast Iron.  As I have gotten older, I find myself gravitating towards the cast iron more often.   In addition to loving cast iron, I use my  Pit Boss Pro 1100 as more of a convection oven.

Soups, beans, and stews are always my favorite dinners in the fall and winter months but the smoker gives the bonus of smoke flavor, as well as slow-cooked tenderness. I picked up my Pit Boss Grill at Lowes, but Walmart and Amazon carry other Pit Boss options or the Pitboss website.

Smoked Turkey Corn Chowder Directions

I made this using leftover smoked turkey breast, but any smoked turkey will work. (Check out my Smoked Turkey Recipes -> here).

The turkey was smoked on my Pit Boss Pro 1100 from Lowes; if you don’t have Lowes, don’t worry, both Walmart and Amazon carry other Pit Boss options or the Pit Boss website itself.  I love that I can set it to 225 with smoke, run inside to take a shower or prep sides, and it just cooks my meat with fantastic smoke flavor!

If you use a preseasoned cast iron Dutch oven, wipe it down with oil to help make sure that it is ready to cook without having stuff stick. I use an old cast iron Dutch oven the old lady picked up for $5, which has worked amazingly well!

An Enameled Cast Iron would work, but the smoke would stain the enamel of the Dutch oven.  Also, be sure to know How To Season Your Cast Iron. (You can see my post-> here!

Strain your can of kernel corn before adding to the Dutch oven. 

Oil down your cast iron and then start to add your ingredients, except for the half and half.

Mix everything in the Dutch oven.  If you need to add more broth and fire up your smoker!! 

Now, this is where it pays to know how your smoker cooks and how you like to smoke.  I want to do a low, slow smoke using the smoke setting on my Pitboss. Start up your smoker to get the smoke rolling! I set my Pit Boss Pro 1100 to a smoke setting of P4 for the smoke setting. This time around, I used Mesquite Pit Boss Pellets to smoke my roast.

Set the entire Dutch oven on your smoker once you’re rolling smoke, without a lid, so the smoke can saturate the beans.

I smoked my chowder for 1 hour and then turned the heat up to 225 for 2 hours.

Stir the chowder occasionally as it is smoking to allow the chowder to cook evenly and also smoke flavor everything.

I then poured in the half-and-half and turned it up to 250 degrees for another hour before serving! 

Serve and enjoy! I topped with some green onion when serving!

How To Store Leftover smoked turkey and potato soup

Store in the fridge for up to three days in an airtight container. You can freeze the leftover chowder in an airtight container for up to three months.

Storing leftovers properly requires the right tools! My preferred storage method is if the leftovers can be sealed in a food saver. If not, then an air-tight container or Ziploc bag for the fridge is the way I go. The air-tight container and a freezer Ziploc bag are the next best bet for freezing the leftovers. I also use a food scale to measure portions and divide them into serving sizes.

A dry rub works amazingly well on turkey, but doing a brine with the dry rub adds more flavor.  There is no wrong way to smoke a turkey.  Now, I buy extras during the holidays, so I have extra turkeys to smoke later in the year!
