I always make more meat than we need at any time of the year. The holidays are no different, and this year I opted to try using my leftover smoked turkey in Taco soup!! It did not disappoint!  It was so easy to throw together but also, the house smelled amazing.

Crockpot Smoked Turkey Taco Soup Ingredients:

How To Make Crockpot Smoked Turkey Taco Soup:

Take your leftover turkey and shred it; you can use white or dark meat.  You can make this with a not smoked turkey as well.

I used an 8-quart crockpot, which means the batch is big enough to have leftovers!!

Spray the crockpot with a nonstick spray and start to open up all your cans, or use a crockpot liner.

In a strainer, strain your canned corn and beans and then drop them into the crockpot. Rinse them off as well this will remove the excess starch, do not rinse them if your beans have a sauce to them.

Next, add in the rest of the ingredients and seasonings except for the broth I do that last.

  1. My husband has been obsessed with smoking everything this summer; I have lots of leftover smoked meat that we are going to have to use to make some taco soup. Thanks for the recipe (and the idea!).
