Smoked Turkey Stew Recipe In A Dutch Oven

Thanksgiving is over, so it is time for all the leftover turkey food! Smoked Turkey Stew is such a good dinner. The broth and warm food were perfect for a post-holiday leftover meal.

While this could be made in the crockpot or on a stovetop, I love to cook outside. One of my favorite parts about my pellet grill is that I can use it like an oven and add more smoke flavor to my dishes. Cast iron Dutch ovens are excellent for this as well.

Smoked Turkey Stew Ingredients

  • Leftover Smoked Turkey– I used leftovers from this->Smoked Turkey Recipe; any leftover turkey will work.
  • Baby Potatoes– I use these often in stews and chowders as it doesn’t require a lot of cutting. I cut my baby potatoes in half for this recipe. You could quarter if you need to cut the cooking time down.
  • Chicken Broth This recipe could use turkey, vegetable, or garlic broth. If you have the turkey carcass from a smoked turkey, you can boil it down to make broth. The flavor is fantastic, but it can be some work to do.
  • White Onion– Chop this up; I did large pieces as the kids will choose to pick out the onion most of the time. It adds the flavors, but picky eaters will pick around it.
  • Celery– This will also be chopped to put in the stew. I did larger pieces for the picky eaters; you can do finer cut pieces if there are no picky eaters.
  • Montreal Steak Seasoning
  • Johnny’s Seasoning Salt
  • Garlic Salt
  • Black Pepper
  • Minced Garlic This can be substituted with fresh garlic or garlic powder instead of minced garlic.

How To Make Smoked Turkey Stew

Start by pulling meat off your smoked turkey. I tend to do this the night before and bag it into Ziplocs for leftover recipes to make the next day or freeze for later.

If using Better Then Boullion broth, start by making your broth. I started with 4 cups of broth and then added the 5th when I felt it wasn’t enough coverage in the Dutch oven.

If you use a preseasoned cast iron Dutch oven, wipe it down with oil to help make sure that it is ready to cook without having stuff stick. I use an old cast iron Dutch oven the old lady picked up for $5, which has worked amazingly well!

Fire up your pellet grill to a smoke setting.

Start by chopping your vegetables for the stew. I used baby gold potatoes that I just cut in half, and you can cut them into quarters if you want. I forgot to pick up carrots, so I put corn in place.

Layer into your dutch oven the vegetables and turkey. I put my potatoes at the bottom of the Dutch oven to be closer to the heat source since they will take the longest to cook.

Add your broth and seasonings into the Dutch oven. Adjust your seasoning amounts based on how seasoned the turkey is; if you had a heavy rub and those pieces were in the stew, I would use less seasoning.

Mix the contents in the Dutch oven, and carry it to your smoker.

Turn your pellet grill to a smoke setting, and once the smoker is rolling, smoke set the Dutch oven in the smoker without the lid. I used mesquite pellets, but the flavor of the pellets can be any.

Allow to smoke for an hour, then turn the heat up to 225; you can smoke the whole time at this temperature or turn it up to cook faster. You will cook till the potatoes are tender.

I cooked mine for 1 hour of smoke time, three and a half hours at 225 degrees, and then turned it up to 300 for another hour.

How To Store Leftover Turkey Stew

Once the stew has cooled, store it in the Dutch oven or an airtight container. Store in the fridge for three to five days. This is a stew I have not frozen before, and I am not sure how the potatoes would freeze.

Either reheat in the microwave or on the stovetop.
