Smoked Egg Salad Recipe

This smoked Smoked Egg Salad is the perfect way to use leftover smoked eggs! With the holidays coming I am already looking forward to all the goodies I have planned to smoke on my smoker! Test runs throughout the year are always required, right?

Making enough for leftovers the smoking anything is important! We have made Smoked Chicken Salad and Smoked Salmon Salad for lunches, and they were amazing! I had no doubt that Smoked Egg Salad would be just as big of a hit.  Now I do wish it had fresh red onion in, but we didn’t have any due to the recall.

How To Make Smoked Egg Salad

I shared how I love to smoke my chicken eggs (see it -> here). I smoked them on Pit Boss Pro 1100 from Lowes, if you don’t have Lowes, Walmart and Amazon carry other Pit Boss options or the Pit Boss website.   Setting it at smoke doesn’t raise the temperature too much to overcook the eggs. 

Cut your eggs in half and pop the yolks into a bowl on the side.

Tear up or cut up your egg whites into pieces. 

Chop up your veggies and pickles to the thickness that you like.

In a bowl mix together your egg yolks, mayo, mustard, and dry seasonings. 

Mix in the veggies and your egg whites into the egg yolk mixture.

Taste test and add in more seasonings. 

Serve and enjoy!  

How to store leftover smoked egg salad

Store in an airtight container for 2 to 3 days in the fridge after mixing.

This Smoked Egg Salad Recipe is the perfect way to use up leftover smoked eggs! Pair this up with good bread to make the perfect sandwich!  Add different seasonings or mix in different vegetables to make it different everytime!
