Fire up and reoil your Blackstone Griddle. If you are unsure how to oil your Blackstone, check out my How To Care For Your Blackstone.
While your griddle is heating up to a medium heat, heat your leftover Philly Cheesesteak if it is not warm from coming off the griddle.
If you want, spread the tortilla inside with butter, mayo, or even a jalapeno sauce for added flavor.
The next step is to top half of the tortilla with Philly Cheese Steak filling; the other side of the tortilla will have nothing, so it folds over.
Lay a piece of cheese or top with Cheez Whiz. You can top it with slices of Provolone cheese, American cheese, or any sliced cheese you choose.
Fold the tortilla in half the rest of the way and throw it on the hot griddle.
Use the Long Blackstone spatula to flip your Quesadilla when it has come to a golden brown on the outside of the tortilla.
Allow for the cheese melt to happen, as you are cooking the quesadilla
If your tortilla fits under a dome, you can place it under it to help make melted cheese.
Remove and Serve!
