Leftover Smoked Prime Rib Quesadilla On A Blackstone Griddle!! Quesadillas are a great way to up leftover holiday meat to make more meals out of the leftover meat! Add in Horseradish to give the Quesadilla a kick or a bit of BBQ sauce to sweeten it up! You can make these on the stovetop in a pan or cast-iron skillet if you don't have a griddle.

Slice up or tear up your prime rib, I used rarer pieces as I knew it would cook some in the process.
If your prime was in the fridge then microwave it for about 30 seconds or warm it up in a pan to make sure it will be warm after cooking your sandwich.
Spread out your tortilla, if you want you can put on some horseradish sauce onto the tortilla.
Next spread out the prime rib and then top with shredded cheese.
Fold the tortilla in half around the meat and cheese.
Fire up your Blackstone to low-medium heat and add a bit of oil if necessary.
Once your griddle is warm place the folded in half tortilla onto the griddle and allow to cook.
When the side of the tortilla on the griddle is starting to brown flip the tortilla over to cook the other side.
Remove and serve when the other side is cooked as well.
