Leftover Smoked Prime Rib Quesadilla On A Blackstone Griddle!! Quesadillas are a great way to up leftover holiday meat to make more meals out of the leftover meat! Add in Horseradish to give the Quesadilla a kick or a bit of BBQ sauce to sweeten it up! You can make these on the stovetop in a pan or cast-iron skillet if you don't have a griddle.

  • Slice up or tear up your prime rib, I used rarer pieces as I knew it would cook some in the process. 
  • If your prime was in the fridge then microwave it for about 30 seconds or warm it up in a pan to make sure it will be warm after cooking your sandwich.  
  • Spread out your tortilla, if you want you can put on some horseradish sauce onto the tortilla.
  • Next spread out the prime rib and then top with shredded cheese.
  • Fold the tortilla in half around the meat and cheese.
  • Fire up your Blackstone to low-medium heat and add a bit of oil if necessary.
  • Once your griddle is warm place the folded in half tortilla onto the griddle and allow to cook. 
  • When the side of the tortilla on the griddle is starting to brown flip the tortilla over to cook the other side. 
  • Remove and serve when the other side is cooked as well.
