Leftover Prime Rib Breakfast Hash

Leftover Prime Rib Breakfast Hash is perfect to use up leftover holiday smoked prime rib! The Blackstone or a griddle to make this meat and potato breakfast. Use Potato O Brien, eggs, and cheese to combine with the prime leftover for an amazing flavor combination! Making this on the Blackstone Griddle makes for easy cooking and clean up!

Ingredients

  • 28 Ounce Frozen Potatoes O'Brien
  • 6 Eggs
  • 2 Cup Mexican Cheese
  • 8 ounce Leftover Smoked Prime Rib

Instructions

  • Fire up your Blackstone and grease it up.
  • Once your Blackstone griddle or skillet is warmed up and oiled up, turn the heat down.
  • Spread out your frozen potatoes out onto the griddle; you will want to get these going first so they can start to thaw and brown.
  • In a large bowl, whisk together your eggs to be scrambled. I pour about 1/2 cup of water into the eggs to help them be fluffier.
  • While the potatoes are starting to cook, cut up leftover prime rib.
  • Push the potatoes to one side on the other side of the griddle from the meat.
  • Spread the meat out onto the other side of the griddle.
  • Move the meat over into the potato mixture and then pour the egg mixture on the other side of the griddle.
  • The eggs will scramble up in no time, and I move them around with one of the spatulas to make sure they scramble evenly.
  • Once the eggs are almost entirely done cooking, start to mix them up in your potatoes and meat mixture.
  • When they are well-mixed, top with cheese and mix some to melt the cheese into the mixture.
  • Turn the burners off, and you can choose to top with more cheese and let the cheese melt.
  • Serve and enjoy!
