This Brisket Quesadilla is perfect to make on your Blackstone Griddle! Leftover smoked brisket recipes are always a hit and the easier the better! Add in bbq sauce to add more bbq flavor or a jalapeno sauce to kick up the flavor!
Prepare your Blackstone Griddle with a fresh bit of oil.
Shred your brisket to put into the quesadilla, I microwaved mine for about 30 seconds since it had been in the fridge overnight from being cooked the night before.
Spread out your tortilla and sprinkle with cheese, then top the cheese with brisket.
Top with more cheese and then drizzle with some bbq sauce.
Fold the tortilla in half around the meat and cheese.
Fire up your Blackstone to low-medium heat and add a bit of oil if necessary.
Once your griddle is warm place the folded in half tortilla onto the griddle and allow to cook.
When the side of the tortilla on the griddle is starting to brown flip the tortilla over to cook the other side.
Remove and serve when the other side is cooked as well.
