Smoked Cheesy Potatoes Recipe

Smoked Cheesy Potatoes Recipe is the perfect side dish to make while smoking any meat! The bacon and cheese are the perfect complements to the potatoes! Use red potatoes, a mixture of cheese, and your favorite bacon. Plus you can add in jalapeno peppers as well.

Instructions

  • Start a large stockpot boil with water, this will need to be large enough to hold all 5lbs of Red Potatoes.
  • Wash off your potatoes and add to the pot of boiling water, once it is at a rolling boil.
  • Once your potatoes are boiled drain them and allow the potatoes to cool off, I let them set in an over the kitchen sink strainer.
  • While your potatoes are cooling start to prepare your bacon, I sliced mine up.
  • Cook up your bacon, I tried to leave it juicy since I knew it would cook more in the smoker in the pan with the potatoes.
  • Once your potatoes have cooled off cut them up into chunks and place them into a large bowl.
  • Cut your blocks of cheese into about 1/2 inch cubes.
  • Add your bacon and cheese to the mixing bowl with the potatoes and stir until it is well mixed together.
  • Add in your other ingredients and stir the mixture till it is mixed well.
  • Spray your baking pan, I used a 4.8 quart (10X15) to put mine in.
  • Spread your potato mixture out into the pan or pans.
  • Get your smoker ready to go and up to temp.  I smoked min on the smoker for 250 degrees for 85 minutes.
  • Serve and enjoy!
