Wash and pat dry your potatoes, you will want to do this to make sure that you have removed all the dirt off of them.
Start your smoker rolling smoke, I used Mesquite pellets but you can use any flavor of pellets to smoke your baked potatoes.
Once I had my Pellet Grill rolling smoke I set it at 225 degrees with the P Setting at P7.
Take a fork or a long kabob skewer and stab each potato over and over. This will allow the moisture to escape but also for the smoke to go into the potato as well.
Next rub down your potatoes with olive and then grind salt over them.
Set on your rack in your smoker and allow to smoke for at least two hours. If you want you can rotate them but I prefer to set it and forget it.
Test the your potato being done with a fork before removing from the smoker.
Serve and enjoy!!
