Instructions

  • Decide on how many eggs you are making. I was trying to fill the old lady's deviled eggs tray for Thanksgiving but didn't fill it. I started at 12 but we broke some and also ate some.
  • Start a large pot of water boiling.
  • Once your water is at a rolling boil carefully place in your eggs.  I boil my eggs for 2 minutes per egg in the water.
  • Remove and put in an ice water bath for ten minutes.
  • Start your smoker up to get a good smoke rolling.
  • Peel your eggs out of the eggshell.
  • Spray your smoker racks or wipe down with some oil to prevent sticking.
  • Spread your eggs out on the smoker racks. I spaced mine out of a couple of racks to allow plenty of circulation in the smoker as well.
  • Carefully insert the smoker racks into your smoker once you are ready to smoke the eggs.
  • Allow to smoke for about 30 minutes - 45 minutes till you have the color you want.  The eggs will turn yellow as they absorb the smoke and the flavoring.
  • Remove and enjoy!!
