Smoked Hard Boiled Eggs

Decide on how many eggs you are making. I was trying to fill the old lady's deviled eggs tray for Thanksgiving but didn't fill it. I started at 12 but we broke some and also ate some.
Start a large pot of water boiling.
Once your water is at a rolling boil carefully place in your eggs. I boil my eggs for 2 minutes per egg in the water.
Remove and put in an ice water bath for ten minutes.
Start your smoker up to get a good smoke rolling.
Peel your eggs out of the eggshell.
Spray your smoker racks or wipe down with some oil to prevent sticking.
Spread your eggs out on the smoker racks. I spaced mine out of a couple of racks to allow plenty of circulation in the smoker as well.
Carefully insert the smoker racks into your smoker once you are ready to smoke the eggs.
Allow to smoke for about 30 minutes - 45 minutes till you have the color you want. The eggs will turn yellow as they absorb the smoke and the flavoring.
Remove and enjoy!!
