Smoked Sweet Potato Casserole is a delicious twist on a Thanksgiving classic side dish! Making this on the smoker frees up oven space as well! The homemade pecan butter streusel topping adds amazing flavor! This is the BEST sweet potato casserole ever! Not only for Thanksgiving this is great for Christmas, Easter, special occasions, or any dinner even!

HOW TO SMOKE SWEET POTATOES

  • Just like baking a baked potato or sweet potatoes be sure to wash them of any dirt.
  • Allow the potatoes to dry and stab them with a skewer or a knife, puncturing the potato will allow it to not explode during the smoking process.
  • Clean up your smoker and have it ready to roll a smoke.
  • Turn your smoker to 350 degrees and place in your sweet potatoes.
  • I placed the smaller sweet potatoes on the left side of my grill as that side doesn't cook as hot, and put the large sweet potatoes on the right-hand side as that side of the smoker seems to cook hotter.

HOW LONG TO SMOKE SWEET POTATOES:

  • Smoking sweet potatoes aren't too hard to do.
  • Leave the sweet potatoes on the smoker for about 35 minutes.
  • You want to pull them when they being to soften, I squeezed mine with tongs to test them, or till they are fork tender.
  • Remove your sweet potatoes, I left my smoker rolling for baking the sweet potato casserole in.

HOW TO MAKE SWEET POTATO CASSEROLE:

  • Now you could put the casserole in the oven instead of putting the dish on the smoker, using smoked sweet potatoes will add a smoke flavor even in the oven.
  • Slice your smoked sweet potatoes and remove the skin. You can use an oven glove or allow them to cool off a bit.
  • If you did not smoke your sweet potatoes boil a large pot of water to boil the potatoes into before making them into mashed potatoes.
  • Place the peeled potatoes into a large mixing bowl and add ¼ Cup Butter, Eggs, Vanilla, Cinnamon, White Sugar, and Cream.
  • Use an electric mixer, hand mixer, or potato masher to combine this together until it is a creamy sweet potato mixture.
  • Grease a 9X13 pan or casserole dish with a cooking spray, if placing the casserole in the smoker this dish will stain with the smoke from the smoker. 
  • Move the sweet potato mixture into your prepared baking dish.
  • In a small bowl combine ¼ butter, flour, brown sugar, and pecans with a spatula until is a coarse meal. The butter does not need to be melted butter room temperature butter will work.
  • Sprinkle this mixture over the top of the casserole of sweet potato filling, for a crunchy topping. , it will be like a crunchy streusel or cobbler topping inconsistency.
  • Either bake or smoke the dish for about 30 minutes at 350 Degrees until the topping is golden brown.
  • Store in the fridge in an airtight container or with plastic wrap or aluminum foil on it, it tasted amazing the next day.
