As with any smoking meat the longer the rub sets on the meat the better, you can put it back in the fridge for a day or two after rubbing the meat with spices.
Use a brush or a large bowl to cover your pork in oil.
Sprinkle to your taste on your seasonings and mix it all around. Allow it to marinate for at least a couple hours before smoking if you aren't waiting a couple of days.
Preheat your smoker and get a good smoke going, I brought mine up to 220 degrees and held that temperature for the whole smoke
Spray your smoker rack with a nonstick spray.
Smoke your pork chops for about 2 hours until they reach an internal temperature of 160 degrees.
