Instructions

  • A couple of hours before you are ready to make your fried rice or the night before cook up your white rice.
  • Spread out your rice on a cookie sheet to allow to dry out some after it is done cooking, I let mine dry out for about an hour or two depends on what’s going on before dinner time.
  • Take your leftover smoked pulled pork and shred it if needed or grab it out of the fridge.
  • Whisk your eggs in a bowl and add just a splash of water, the water helps them to be a bit fluffier. Salt and pepper to the egg mixture.
  • Fire up your Blackstone griddle and re-oil it down if needed.  I keep mine ready to go at all times so all I have to do is turn it on and re-oil it.
  • Spread out your pork and your rice to warm up, I did drizzle it with some soy sauce and dropped in my minced garlic as well.
  • Next, I add my vegetables to the meat and allow them to cook with the meat.
  • Then mix everything together with the rice, meat, and veggies onto one side of the griddle.
  • Pour your eggs onto the other side of the griddle allow to cook, if your griddle looks dry squirt on a bit more vegetable oil. These will get chopped up kinda like scrambled eggs in your rice.
  • Once your eggs are cooked mix the eggs into everything on the griddle.
  • Drizzle with soy sauce and allow to cook a couple more minutes on the griddle.
  • Serve and enjoy!!
