Boil your eggs until they are hard, and allow them to chill before peeling. I boiled my dozen of eggs for 27 minutes and put then put the eggs in an ice bath to allow them to be easy to peel.
Chop your celery and onions and spread them out on a pan or in a tin pan.
Fire up your smoker to a smoke setting, I used mesquite pellets on this but you could use any flavor.
I used a P Setting of 7 and once you have a good smoke rolling set your eggs on the top rack and the pan of vegetables in the smoke.
Allow your smoker to roll smoke on the eggs and vegetables for about 30 minutes.
Flip your eggs and stir your vegetables halfway through to make sure that both sides of the food get a solid smoke evenly.
Boil water and cook the pasta as per the directions on the box and strain.
You can run cold water over the noodles to help the noodles to chill faster.
Cut the eggs in half and place the yolks in a separate bowl.
Chop up your veggies and olives.
In a bowl mix the egg yolks with salt, pepper, mustard, and mayo, mix until smooth.
In a large bowl dump in the veggies, chopped ingredients, and pasta, mix it all together.
Next mix in the mayo mixture, if the pasta seems dry you can add in more mayo or mustard.
