Start by cutting the bell peppers, red onion, yellow squash, and zucchini.
Slice your Southside garlic sausages into about 1-inch thick rounds.
Place all the sausage and vegetables in a large container or a large bowl.
Drizzle the sausage and peppers with your olive oil and seasonings.
Use a large spoon, or a spatula to mix it up, or if the container has a lid shake the container to coat the food with the oil and the seasonings evenly.
Fire up your Blackstone griddle and re-oil it down if needed.
Turn the burners of your Blackstone Griddle to medium heat.
Once your griddle is hot, throw everything from the container onto the griddle. I tested this by dropping a slice of zucchini on the griddle, when it sizzled, I knew the griddle was hot enough to cook.

Southside Sausage does come fully cooked, so the Blackstone is reheateing the meat up to be served. If your sausage is not fully cooked, it will need to cook longer until the correct food-safe temperature is reached it needs to cook.
Stir often and cook for about 15 minutes.
If the food starts to stick to the griddle surface, add a bit more vegetable oil.
Once the vegetables are cooked and the sausage is fully reheated, remove and serve.
